Pyrenees Vineyard & Cellars include a Food Drive supporting UCAN Food Bank during the months of November and December!
Roseburg, Oregon – The Pyrenees Vineyard & Cellars will again be supporting the UCAN Food Bank by being a drop off location from November 1st to December 31st. The Holiday Food Drive hours are 11 AM to 5 PM seven days a week.
Like the Food Bank, the Apodaca family and their staff believe that no one should be hungry. For the second year, the Pyrenees Vineyard & Cellars South will be collecting non-perishable food for the UCAN Food Bank and our Network of Emergency Food Pantries. Last year this drive yielded over 90 pounds of food.

2009 Chardonnay Wins Double Gold
Pyrenees Vineyard & Cellars, an Oregon wine maker, vineyard and winery located in the Umpqua Valley of Southern Oregon, proudly received a Double Gold award at the 2012 SF International Wine Competition. The Double Gold Medal was given to the Pyrenees 2009 Chardonnay, an Oregon white wine with botanical aromas and a hint of oak. The 2012 San Francisco International Wine Competition was conducted June 15th through June 17th at the Hotel Nikko in downtown San Francisco. More than 4,500 wines were judged this year, the largest Competition in the 32-year history of the event.
According to Executive Director of the San Francisco World Spirits Competition, Anthony Dias Blue, a listing of the top medals awarded will be featured in the August issue of The Tasting Panel Magazine. Double Gold medal winners like Pyrenees will be invited to participate in a 13-city tour sponsored by The Tasting Panel Magazine. Winners will receive an award certificate and a medallion in September.
Pyrenees is among a small group of Oregon wineries situated in the Umpqua valley, an area of varied soil types. The rich diversity of landscapes and climates provide a wide range of conditions needed to produce an exciting array of grape varieties. The cooler valleys allow varietals such as Pinot Noir, Pinot Gris, and Riesling to flourish while the warmer valleys include Merlot, Cabernet, Syrah, Tempranillo, and Grenache.
According to Katie Shook, Manager at Pyrenees Vineyard & Cellars, the Umpqua Valley is Oregon’s most complex wine growing region. “We have a unique environment and soil chemistry here in the Umpqua Valley to support the growth of robust varietals. The Double Gold award from the SF International Wine Competition validates the region and Pyrenees ability to produce a world class wine from Southern Oregon. I expect to see many more award winning wines coming from Oregon in the future.”

Local Pumpkin Festival to Feature Straight Whiskey Blues with a Southern Rock Beer Chaser!
Last year, the Canyonville Pumpkin & Music Celebration had record attendance when it featured legendary blues soul performer, Curtis Salgado. This year, the festival hopes to attract an even larger crowd by continuing with entertainment from yet another band that Curtis Salgado recently recorded with.
Seattle-based Tim “Too Slim” Langford with his band the Taildraggers will headline the free concert at the 8th annual Canyonville Pumpkin & Music Celebration on Saturday, Oct 13th at Pioneer Park. In 2010, Too Slim and the Taildraggers attracted 14,000 concert goers, the largest attendance on record at River Rhythms in Albany. River Rhythms is the equivalent of Roseburg’s free Music on the Half Shell concert series.
Too Slim & the Taildraggers music is often described as sounds like ZZ Top, Tom Petty & the Heartbreakers, Dan Fogerty, and Johnny Winter. Their most recent album, Shiver, with guest soul man Curtis Salgado went to No 5 on the Billboard charts and was nominated “Best Rock Blues Album” at the 2012 Blues Music Awards in Memphis.
If Tim “Too Slim” Langford only played slide he would slither around most other blues guitarists and put a ferocious bite on their pride. However, as the sole six-string slinger, main songster and lead singer of the power trio he founded in 1986, he is a total force of nature. Leaving musical tracks for others to try and follow with now 16 albums and countless gigs, he remains as untamed and menacing as ever.
Over the years, the band has created an eclectic style of blues and rock that has become a genre all their own. The eclectic nature allows Too Slim and the Taildraggers to easily crossover and appeal to audiences of various musical tastes.
Experiencing a Too Slim and the Taildraggers’ concert is like taking a journey through the history of American music. Too Slim’s style ranges from down-home blues, funky blues rock, Americana, southern swamp rock, and instrumental guitar styles. As the main singer, songwriter, and guitarist Tim “Too Slim” Langford is backed up by the top-shelf rhythm section of Polly O’Keary on bass and vocals and Tommy Cook on drums and vocals.
The band is a hit on several continents including Europe. Too Slim has won multiple awards including Best Guitarist, Best Slide Guitarist, and Best Songwriter. The band is in the Hall of Fame in three NW blues society, voted Best Blues Band 4 times, Best Regional Act 11 times, and recently Too Slim received a Lifetime Achievement Award. On his Facebook page, Too Slim self describes “Straight Whiskey Blues with Southern Rock Beer Chaser”.
Too Slim and the Taildraggers will perform 2 different sets at 4:00 PM & 6:00 PM, shortly after the conclusion of the 3:00 award ceremony on Saturday, Oct 13th. This is a rare treat in Southern Oregon for free concert goers not to be missed.
Throughout the day, the Canyonville Pumpkin & Music Celebration will also host other bands, numerous contests such as a Giant Pumpkin Weigh In, Pumpkin Recipe Contest, Tall Tales and many others as well as a classic car show. Kids activities will be provided by the YMCA and Wildlife Safari. Be on the look out for additional updates between now and Oct 13th, 2012.

Two For Twenty: Pyrenees Whites
Labor Day might mean that it’s time to put the white clothing away in the closet. But it definitely doesn’t mean the end of the season for white wines. In fact, the period as summer turns to autumn is a great time to enjoy the crisp, apple and pear flavors of many whites, including today’s duo.
From Oregon State, we’re proud to suggest the Pyrenees 2009 Chardonnay and 2010 Sauvignon Blanc. Priced at a reasonable $20 each, we liked both of these as examples of northwest US variety, bottling depth and offering good balance without breaking the bank.
Let’s take a closer look at the Chardonnay first. They describe it as “old world meets new world”, and that seemed an apt description, with just a hint of mineral and still creamy without being buttery. The nose didn’t grab, but instead of being musty or mushy, this chardonnay tasted bright and fruity, with a little tart pineapple. No real oak here- neutral French barrel aging mean a cleaner flavor and a sharp finish. An excellent pairing wine against seafoods, or for those who like their chardonnay with zest.
The Pyrenees Vineyard 2010 Sauvignon Blanc is, in a word, bewitching. A little herbal note on the nose is interesting, and there are definite flavors of grass and citrus. Light and refreshing, it is fairly neutral and offers some sweetness towards the finish. Plus, it lingers nicely, for quite a while- one of the best endings we’ve tasted from this grape. So, think sipping while you nibble on cheeses or a nice spinach salad- something with a bit of bitterness or creaminess where you don’t want a wine to greatly affect the flavor, but accent it. Available in limited quantities, primarily online, at $20 a bottle!

Oregon vineyards have been producing delicious, award-winning wines since they first started cultivating them in the Umpqua Valley over 40 years ago. Heartblaze.com recently posted an outstanding gluten and dairy free summer garden chicken dinner recipe using fresh garlic scapes and rosemary that will fit into almost any allergy diet and tastes great too. Start by sautéing half a diced white onion along with a few fresh garlic scapes in a Rosemary infused olive oil. Add browned chicken quarters and pour over some Pyrenees Estate White and allow chicken to braise until done or about 40 minutes. An easy to make great tasting recipe!

In order to have the perfect wine experience one needs to have great food. Wine is meant to go with food and great wine, as we have here in the Umpqua Valley, deserves great food. So after enjoying the food of Chef Nathan, Roseburg Country Clubs new chef, I can say we have that quality food component to go with our wold class wines.
I was fortunate enough to attend a five course dinner at the country club recently. Five delicious courses paired with five of the Umpqua Valley’s tastiest wines. As a chef myself, I am always in search of a great food experience. To have an individual with the culinary talents of Chef Nathan among us, means we all have access to some truly delicious wine country food.
The first course of this fabulous meal was potato crusted halibut in a warm cucumber, dill cream. The halibut was cooked beautifully and the cucumber, dill cream sauce drizzled with a bit of tarragon infused oil was to die for. The wine paired with this course was Pyrenees Vineyards award winning 2010 Savignon Blanc and the acidity of the cucumber, dill sauce was the perfect accompaniment to the crispness of the wine. I wanted a straw or perhaps a spoon to get every bit of the sauce as it was so good.
Next came a jicama and radish salad served over grilled pineapple with a black bean sofrito and citrus poached prawns. This was paired with Pyrenees Vineyard 2010 Pinot Gris. A perfect pairing. The spiciness of the black bean sofrito and the sweetness of the pineapple went well with the fruitiness of this wine. My biggest complaint in the world of food is overcooked food and particularly overcooked shell fish. These prawns were cooked to absolute perfection.
The third course was osso bucco of pork over a fennel and pecorino risotto garnished with lemon essence. Ok so this was so darn good, people were wanting to lick their plates… including me. And the pairing was spot on. Pyrenees Vineyard 2009 Chardonnay which has the body and creaminess to stand up to the osso bucco also has a lemon cream component to it that was so lovely with the lemon essence.
The main course was beef short ribs over pea shoots served with potato croquettes and a veal espanol sauce. The short ribs were divine and the sauce was rich and distinct. All paired with Pyrenees Vineyards 2005 Reserve Pinot Noir. The earthiness of the pea shoots really brought out the earthiness of the wine and the two just danced in your mouth. By now we are all stuffed but the dessert was so incredible everyone found room…
Chocolate tort and truffle with orange cointreau. Paired with Pyrenees Vineyard 2009 Apodaca Cabernet Port. When I read the menu and the dessert selection I new right away this would be an incredible pairing. The port has a beautiful hint of citrus much like candied orange zest and to pair it with chocolate, a classic port pairing, as well as bring in the citrus with the orange cointreau; was simply genius. And the proof was in the taste. A truly magical way to end the meal!

SALEM, Jan. 18, 2012 ñ Oregon Gov. John Kitzhaber today announced that he has signed a proclamation designating May 2012 as Oregon Wine Month in recognition of the Oregon wine industryís rapid growth, international reputation for quality and important contribution to the stateís economy.
Speaking to the annual meeting of the Oregon Winegrowers Association in Salem, Kitzhaber said, ìThe Oregon wine industry is not only a key part of our stateís economyóitís an important part of our state identity. In a state where agriculture is our second largest industry, the wine-grape crop is Oregonís leading value-added agricultural segment, contributing $2.7 billion annually to the stateís economy.î
While this is not the first time a governor of the state has proclaimed an official Oregon Wine Month, it has been several decades since Oregon has officially recognized its growing wine industry. The Oregon wine industry comprises more than 420 wineries and 850 vineyards throughout the state and represents more than 13,500 jobs. From the birthplace of New World Pinot noir to warmer growing regions in Southern Oregon, the Columbia Gorge and Walla Walla Valley, Oregon has one of the most diverse and unique wine producing regions in the world.

Fine Pairings For Fish, Fur and Fowl

The camouflage and neoprene crowd long has known a good IPA or even a few Coors Lights can be just the ticket for washing down the fresh fish and game meat they bring home from Oregon’s woods and waters.
Now Dick Calafato is daring them to put down the bottle opener and pick up the corkscrew.

Go ahead. Take a mouthful of Cabernet Sauvignon from his Pyrenees Vineyard and see how it goes with this elk stew.
Now take a quaff of that award-winning savignon blanc and note how that smoked salmon just jumps off the cracker. Now try it with sauteed duck breast.
“Just get these guys to try our wine with wild game, and their expressions say more than words,” says Calafato, the vineyard’s co-owner.
Perhaps best of all, this party in your mouth comes with admission to the 12th annual Jackson County Sportsmen’s and Outdoor Recreation Show, which opens today at the Jackson County Expo in Central Point.
The Myrtle Creek-based Pyrenees is running a booth there highlighting the Southern Oregon wine varieties that go best with the region’s fish, fur and fowl.
They’re cooking up local fare and letting visitors sample the vineyards’ various reds and whites to show how they accentuate different wild dishes.
It’s called “pairing,” and this new addition to the annual sportsmen’s show is enticing even the most loyal sudsmen — if for no other reason than it appeals to their “if-it’s-free-it’s-for-me-I’ll-take-three” gene.
“People will come back two, three times asking to try a different wine with the game,” says Calafato, 73. “It’s not like we’re getting anybody drunk with one-ounce servings, but they enjoy it.”
The sportsmen’s show, produced by Joe Pate’s company, ExpoSure, runs through Sunday. Before coming to Medford, the show made stops this month in Eugene and Roseburg.
Headlining this year’s show is the “Jungle Kings,” a live lions show from trainer Steve Martin, who last year brought wolves to the Expo.
The stars of the show are two 300-pound male lions, and they are accompanied by Levi, one of two capuchin monkeys to play Jack in “Pirates of the Caribbean” movies.
New exhibits this year include the U.S. Coast Guard’s Response Boat and boating-safety display, as well as a solar-powered boat and an “ideal campsite” display by the Boy Scouts of America.
Returning regular David Morris will display his Oregon big-game, record-book animal mounts, which includes a full-body mount of a 2,100-pound bison.
A 180-foot casting pool for fly-casters, the Oregon Department of Fish and Wildlife’s fish tank and the annual Southern Oregon Head and Horns Competition also are scheduled for the show.
The game-pairing, however, is drawing the lion’s share of interest.
“It’s been a huge hit in Eugene and Roseburg,” Pate says. “It’ll probably be the same in Medford.”
Pate wasn’t so sure 31/2 months ago when the game-pairing idea popped into his mind.
Though it’s not new — numerous books and websites are devoted to the subject — it was new to the Northwest outdoor-show world. Pate talked about it with Umpqua County Fairgrounds folks, who directed them to Calafato.
“I told him, ‘Keep in mind the audience who comes to these shows isn’t necessarily in your wheelhouse,’ ” Pate says.
Calafato thought it would at least get his vineyard’s name tossed around a few new venues.
“I thought, well, it’s different,” he says. “And there’s nothing to lose.”
They bought meat from a Roseburg butcher to make a deer/elk stew, sauteed duck and smoked salmon.
Visitors choose a sample of one of Pyrenees’ wines, then have a taste of one of the meats.
The general rule is red wine for red meat, whites for fish or fowl. But they can be mixed.
Bolder, spicier wines accentuate the deer and elk, but good pinot noirs like those grown in Southern Oregon can fit in well with fish and fowl.
And if you like a good cabernet or tempranillo with your goose jerky, have at it, Calafato says.
“Everybody’s palate is different,” he says.
Twenty years ago, the only thing sounding like wine you might hear coming out of Myrtle Creek were complaints about why the Umpqua River’s winter steelhead run was late.
But Southern Oregon’s explosion on the wine front, particularly with white pinot gris and red pinot noirs, has landed this outdoor region on the wine-lovers’ map.
Getting more hunters and anglers to trade the mug for some stemware is a quest Calafato is willing to try one outdoor show at a time.
“They’re reacting well to this, better than I thought,” Calafato says. “It’s good timing.”

’09 APODACA
This is a lovely, medium bodied port with deep aromas of cocoa, currant, plum, and black cherry. The mouth feel is rich and smooth with flavors of cherry cordial, ripe plum, blackberry, prune and cassis and just a hint of candied orange. Finishes with a smooth, citrus kiss that beautifully balances out the richness and depth of this dessert wine leaving the palette hungry for more! Tremendous paired with any chocolate dessert, chocolate truffles and takes chocolate mousse to a more decadent level.
’09 PINOT NOIR
This is a lively, fruity pinot that is everything an Oregon pinot should be. The nose is feminine and offers delicate aromas of cherry, raspberry and rose petals. On the palate this layered wine delivers intense flavors of bright, ripe cherry, strawberry, raspberry and a hint of sassafras and green tea. Flavors are very well integrated offering a complexity and richness that stays on the tongue. Easy to drink and truly a wine that can be enjoyed on its own or with food. Pairs well with duck, roasted chicken or game hens and salmon. Lovely with wild mushrooms too.
’09 CABERNET SAUVIGNON
This is a layered, medium bodied cab with terrific fruit as well as an herbal, vegital balance. Aromas of plum, black cherry, celery root and cinnamon. Soft expressive, jammy fruit on the palette with a kiss of vanilla. Well balanced and over time this cab is sure to expose more hidden layers of flavors.
’09 MERLOT
This is a lovely medium bodied Merlot with beautiful aromas of ripe cherries and plums with just a hint of spice, licorice and smoke. On the palette flavors of bright cherry, plums, cocoa and earth are balanced with hint of bacon and vanilla. This wine has soft accessible tannins and good acidity and is very accessible and easy to drink. Enjoy by itself or pair with food. Sublime with stuffed chicken thighs.
Smoked Salmon Appetizers
Smoked Salmon (lox style)3-4 oz cream cheese
1 Tbs Dijon Mustard
2 tsp dried dill or use sprigs of fresh dill
1/2tsp black pepper
1 lemon sliced paper thin and all seeds removed
Triscuit crackers
Mix cream cheese, mustard, dried dill (if using fresh dill, wait to add the dill) and pepper in small bowl. Spread the cheese mixture on to crackers using about 1 Tbs per cracker. Add a small piece of fresh dill (if not using dried) and top with some smoked salmon. Top each cracker with half a slice of lemon sliced paper thin. Serve with Pyrenees Pinot Noir.
Filet Mignon with Pasta Scampi
Salt
1/2 pound thin spaghetti
1/4 cup plus 3 tablespoons extra virgin olive oil (EVOO), divided
Four 1-inch-thick filet mignon steaks
Freshly ground black pepper
4 sage leaves
4 slices pancetta
1 pound medium size shrimp, deveined and tails removed
3-4 cloves garlic, chopped
1/2 teaspoon crushed red pepper
1/2 cup white wine or seafood stock
Grated peel and juice of 1 lemon
Flat leaf parsley, chopped (a generous handful)
1 endive, thinly sliced crosswise
1 small head radicchio, shredded
1 bunch arugula, chopped
Balsamic vinegar, for drizzling
Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente. Drain, setting aside a ladle of pasta cooking water.
While the pasta is working, in a nonstick skillet, heat 1 tablespoon EVOO, one turn of the pan, over medium-high heat. Season the steaks with salt and pepper. Place a sage leaf on each and top with a slice of pancetta. Place the steaks in the skillet pancetta-side down, and cook, turning once, until browned, 10-12 minutes; keep warm.
In a large skillet, heat 1/4 cup EVOO, four turns of the pan, over medium heat. Stir in the shrimp, garlic and crushed red pepper. Cook until pink, 6-7 minutes. Add the wine, reduce for 1 minute, then add the lemon peel, lemon juice and parsley. Add the reserved pasta and cooking water and toss; season with salt and pepper.
Toss the endive, radicchio and arugula with a little vinegar and the remaining 2 tablespoons EVOO; season with salt and pepper. Place the greens on two plates alongside two steaks per plate and the scampi pasta.

Diane’s Easy Steak
London Broil or Flank Steak
Marinade:
1/3 cup soy sauce or tamari
1/4 cup red wine vinegar
1/4 cup Pyrenees Cabernet Sauvignon
2 Tbs lemon juice
2 Tbs Worcestershire sauce
1Tbs Dijon mustard
3 garlic cloves minced or pressed through garlic press
1 tsp of salt
2 tsp black pepper
1/3 cup olive oil
Combine all marinade ingredients except olive oil in bowl and whisk together. Slowly pour in olive oil in a small stream whisking as you pour until the oil is entirely incorporated. Place steak in a large plastic bag and pour in marinade. Refrigerate for several hours. Remove from fridge 1 hour before ready to cook. Remove meat from marinade and using a paper towel pat off extra marinade from steak. Grill or broil to desired doneness. Cover meat and let rest 10 minutes or so. Slice meat on angle in thin pieces and serve with juices.

Chicken in Tarragon Cream Sauce
6 chicken thighs -bone in or boneless, skinless works great
1/4 cup minced shallots
2 Tbs butter
2 Tbs extra virgin olive oil
½ cup of Pyrenees 2006 Chardonnay
1 Tbs chopped fresh tarragon (you can substitute 1-2 tsp of dried but it is better with the fresh tarragon.)
3/4 cup heavy cream or whipping cream
1-2 Tbs fresh lemon juice
Salt and pepper
Rinse and pat dry chicken. Salt and pepper both sides. Heat butter and olive oil in large skillet or frying pan. With pan on medium high heat, add shallots and chicken and brown chicken for a few minutes on each side. Make sure that you keep an eye on it as you want the shallots to brown too but not to burn. When chicken is browned lower heat to a simmer and add ½ cup of chardonnay. Cover chicken and let simmer on low heat until just cooked through, longer for bone in chicken thighs then for boneless. Remove chicken from pan and add tarragon and cream. Simmer until reduced by 1/3 or so (5minutes) stirring often. Sauce will become thicker and more intense in flavor. Add lemon juice 1 Tbs first and taste to see if more is desired. Add chicken back to the pan with sauce and heat chicken through. Adjust seasoning to taste and serve over garlic mashed potatoes or rice.
A Word on Chardonnay
Known as the Queen of white grapes, this varietal can grow just about anywhere. It is the only major white grape of the Burgundy region. Chardonnay is sought after for it’s adaptability to oak and for producing wine of medium body, with a buttery taste.

Grilled Cumin & Curry Shrimp

2 teaspoons ground curry
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 tsp of cinnamon
1 teaspoons salt
1/2 teaspoon cayenne pepper
2 garlic cloves minced or pressed.
2 lemons
4 Tbs melted butter
2 Tbs olive oil
2 lbs large shrimp peeled and deveined
Lemon spice aioli:
Mix together-
½ cup of good quality mayonnaise.
Reserved tablespoon of spice mixture.
Juice of lemon
¼ tsp sugar
Combine spices in large bowl. Reserve 1 Tbsp of spice mixture and set aside for the aioli. Add lemon juice and garlic to spice mixture and blend together. Slowly add olive oil and then melted butter and whisk together. Add cold shrimp and toss to distribute marinade. Marinade will congeal as the butter hardens with the cold temperature of the shrimp. This is what you want. Let shrimp and congealed marinade sit for 30 minutes to an hour, tossing occasionally. Thread shrimp on to skewers. You will have lumps of marinade clinging to the shrimp (and your fingers) as you work. Line up skewers on broiler pan and broil 4 inches from heat for just a 2 minutes on one side and 1- 2 minutes on the other. You can barbecue them too. Be mindful they cook VERY quickly, 1-2 minutes only per side. Serve with lemon spice aioli and rice.
A Word About Pinot Gris
The same varietal, done in two different styles. The French style is rich, stone- fruit laden and is aromatic and perfumed. This version is usually dry to off dry and called Gris. The Italian style is usually very crisp, higher in acid and citrus noted and known as Grigio.

Rack of Lamb

1/2 cup Pyrenees Syrah
1/4 cup pomegranate concentrate
1/4 cup of good balsamic vinegar
2 Tbs tamari or soy sauce.
2 Tbs chopped fresh mint
3 cloves minced garlic
1 Tbs Dijon mustard
Salt
Pepper
Rack of Lamb
Mix ingredients together and marinate lamb for 4-6 hours in refrigerator. Bring to room temp before roasting about 45 minutes out of refrigerator. Roast in 400 degree oven for 35-40 minutes meat thermometer should read 120- 125 degrees for rare and 125-130 for medium rare. Remember lamb will continue to cook after removed from oven. Cover lamb with aluminum foil and let rest for 10-15 minutes. Cut into chops and serve with any remaining pan juices. Great served with garlic mashed potatoes.
A Word About Syrah
This grape continues to be the main grape of the northern Rhone region and is associated with many prestigious, classic wines. This is one that will age for decades, but can still be enjoyed young. Syrah is one of the top 10 planted world-wide.

Gourmet Three Cheese Enchiladas

1 15 oz can of tomato sauce
3 Tbs flour
1 Tbs cocoa powder unsweetened.
1 Tbs Mexican oregano
1 garlic clove minced
1-3 Tbs chili powder. Depends on the heat of the chili powder.
1-2 Tbs spoons sugar (to taste)
3 cups of water
2 cups grated cheddar cheese (sharp or mild as you like)
4 cups of Monterey Jack cheese
4 oz of goat cheese
Flour tortillas
For garnish:
Sliced olives
Green onions thinly sliced
Red onions finely diced
Cilantro leaves, roughly chopped
Sour cream
Combine dry ingredients in a bowl. Whisk in 1 cup of water. Pour canned sauce in sauce pan and add spice and water mixture. Heat on medium heat. Bring to a boil and simmer as the sauce thickens whisk in the last two cups of water. Simmer and reduce a few minutes. This makes sauce for two batches of enchiladas.
Spoon a small amount of sauce into the bottom of a 9×13 lasagna pan. Make sure the bottom is coated with sauce.
In a separate bowl, combine the cheeses reserving 1-2 cups of the Monterey jack for the top of the enchiladas.
Heat tortillas one at a time in a dry non stick pan on the stove. Just to give them a bit of crispness. Fill the skins with some of the cheese mixture and roll up. Place in baking pan seam side down. Repeat with remaining skins until cheeses mixture is used up. Makes 5-6 enchiladas depending on how full you make them. Pour some of the remaining sauce over the top. Remember the sauce recipe makes enough for two batches of enchiladas so you will not use all the sauce or it will be too soupy. Top with remaining Monterey jack cheese and olives. Heat in 400 degree oven for 20-30 minutes until bubbly and a bit crisp on the top. Garnish with green onions, red onions, more olives, sour cream and cilantro.
A Word About Zinfandel
This grape grows in a lot of regions, but most often in warm regions, because of the warm, sunny weather. Heat brings this varietal to excessive sugar levels. Which produce high alcohol, yet well balanced wines. During prohibition, it was the favored wine for Communion. That is why there are so many old vines today.

’05 PINOT NOIR RESERVE
A deep, earthy and dark fruited nose, with hints of cedar; is prefacing an opulent palate of black cherry and plum that finishes beautifully.
’09 GEWURZTRAMINER
This is a lovely round wine with soft fruit and complex floral aromas. Pear, melon and honey suckle fill the nose with just a hint of citrus and minerality. On the palate the wine has so much to offer with layers with pear, apple, melon, honey, straw, lemon and just a hint of spice. The great finish and round texture linger on the palate. The complexity of this wine demands further exploration and it is well balanced with just the right amount of acidity. This wine was purposely not cold stabilized in order to allow for each precious flavor layer to stand out to its fullest. And they do! Excellent food wine and pairs well with slightly spicy dishes such as Thai curries. Try it with Muenster cheese… magical!
’11 PINOT GRIS
Light and tangy with a pear, apple, lemongrass and citrus aroma and flavor. Lovely honey and fruit on the palette with a bright citrus finish. Pinot Gris is known for its uncomplicated easy drinking style and this pinot gris is no exception. This quintessential summer time wine will please both the most experienced wine drinker as well as the occasional wine imbiber. Refreshing to sip a glass or two all by itself but pairs well with light food dishes such as pasta salads or fish dishes with just a hint of spice. Pair this wine with our Grilled Cumin, Curry Shrimp.
’08 SYRAH
Warmer weather produced a more intense smokey, spicy nose with a hint of rose petals and big jammy fruit on the palette. Tastes of black cherry, current, plum, black pepper and cloves. Intense flavors and the hearty tannins and acid make this a perfect food wine.This big fruity Syrah pairs well with beef stew or rack of lamb.
’08 CABERNET SAUVIGNON
A decadent bouquet of plum, blackberry and tobacco, with layers of dark fruit on the mid palate, ending with an alluring finish that goes on and on and on…

’09 MERITAGE
Smoky and warm with delicate hints of black raspberry. A soft, subtle and luxurious blend, with an elegant refined finish.
’07 RESERVE SYRAH
This is an earthy syrah with deep fruit, big black pepper spice and aromas of smoked meat. A medium bodied syrah with rich round flavors of black cherry, pomegranate, plum, cloves. Simply a delicious example of what the Umpqua Valley can do with syrah and why we think no region does it better. Much like the Rhone region in France our climate allows for syrah to ripen with great fruit flavors while keeping the spiciness intact. Layered and interesting this wine pairs well with barbecued meats sausages, lamb and roast beef.
’06 CABERNET SAUVIGNON
Classic Cab nose with aromas of blueberry, blackberry, black tea, green pepper, tobacco, caramel and leather. This is a complex Cabernet with layers of ripe blackberry and plum fruit, rich earthiness and just a hint of eucalyptus and spice. Lots to discover in this wine and your time will be well spent enjoying all it has to offer. Pairs well with fillet mignon or new york steak.

As in any industry change occurs all the time and the wine industry is certainly no different. Winemakers change, tasting staffs change and this summer winery goers will notice a pretty significant change right here in the Umpqua Valley. That is the the name change and new management of what was Julianna Vineyards.
This beautiful winery and vineyard has been purchased by Pyrenees Vineyards adding another winery location for the Pyrenees people. The original Pyrenees Vineyards and Cellars, a mature vineyard located just off exit 112 was acquired more than a year ago. The vineyards and tasting room are located right along the beautiful South Umpqua River and there is a river front deck available where wine loving visitors can sip wine and enjoy the natural beauty of the area. Julianna Vineyards soon to be called Pyrenees North, is located just off of Old Garden Valley Road on Hess Lane and it too boarders the river. This location is right along the Main Umpqua River and like the original Pyrenees has stunning river front seating and expansive views off their river front deck.
For those of us who loved Julianna Vineyards the changes will not take anything away from that which made it a great place to visit. Many of the same wines will be made and the award winning chenin blanc, their signature wine will continue to be produced. The many great events played out on their deck will continue on this summer and there are some new, fun events planned that include delicious food as well as great wine. Each of these two vineyard locations grows a different assortment of grapes. Now having the two locations, wine lovers visiting each location will have more wines to enjoy. The large winemaking facility located at the new Pyrenees North location will allow for making wine for both locations.
If you have yet to visit either one of these winery locations, do not let another summer pass you by without experiencing a visit. Sitting on one of these river front decks, sipping wine, relaxing in the sunshine and enjoying the truly amazing views is an experience many of us travel thousands of miles to find and often at a substantial financial investment. Here it all is, in a location near you, right in your own back yard. Truly magical settings and two locations that bring great wine together with one of the best things the Umpqua Valley has to offer, our beautiful rivers. The settings are idyllic, the wine top notch and the amazingly friendly and welcoming staff are there to bring it all together. Many events are planned for both wineries and you will not have to go far or look hard to find a reason to visit. The Pyrenees North location will open Memorial Day weekend and will be open 7 days a week.
